Gentisuric acid is a hydroxylated form of salicylic acid. It is found in natural compounds and has been shown to be an inhibitor of the reaction mechanism of aspirin. It is also used as an agricultural food additive to inhibit the formation of certain fatty acids. Gentisuric acid may be prepared by hydrolysis of acetylsalicylic acid with hydrochloric acid, or it may be synthesized from natural compounds such as gingerols, shogaols, and zingerone.
