4-Hydroxybenzaldehyde is a chemical compound that belongs to the class of phenols. It is found in many fruits and vegetables, including apples, plums, peaches, and raspberries. It is used as a flavouring agent in the food industry. 4-Hydroxybenzaldehyde has been shown to have an inhibitory effect on hydrogen peroxide production by hydroxylase enzymes. The inhibition is due to a binding interaction that leads to an increased concentration of enzyme substrate (i.e., NADPH) and decreased concentration of the enzyme product (i.e., H2O2). This reaction produces a second-order rate constant for the reaction with hydrogen peroxide that is independent of concentration over a wide range of concentrations.
