Dimethyl DL-malate is a natural compound that belongs to the group of p2-type dehydrogenases. It catalyzes the conversion of 2 molecules of malate into one molecule of fumarate, which is a precursor for biosynthesis in plants and microbes. The biological properties of this compound have been studied in yeast cells and rat liver mitochondria. Dimethyl DL-malate has potent antagonist effects on microbial dehydrogenases, which are enzymes that catalyze the oxidation of alcohols to their corresponding aldehydes or ketones. Preparative high performance liquid chromatography (HPLC) can be used to isolate dimethyl DL-malate from other metabolites found in plant extracts.
