Diethylaminoacetone is an organic compound that is a by-product of the oxidation of ethanol. It has been shown to have potent antimicrobial activity against bacteria and fungi. This compound, which has a constant redox potential, reacts with hydrogen ions to form hydrogen sulfate and chloride ions. The hydroxyl group in this molecule reacts with mercuric chloride to form an alkoxy radical, which then reacts with oxygen to form water and carbon dioxide. Diethylaminoacetone also has a carbonyl group that can react with fatty acids, forming esters called diethylmalonylpropionates.
