Description

1,3-Dipalmitoyl-2-oleoylglycerol is a metastable lipid that belongs to the group of analogs. It has been detected in food composition and as an extractable lipid from animal tissues. 1,3-Dipalmitoyl-2-oleoylglycerol is a mixture of β-unsaturated ketones that are extracted from fats and oils, although it can also be synthesized. The synthesis of this compound can be achieved by reacting an acyl chain with a β-unsaturated ketone in the presence of a base catalyst, such as sodium methoxide or potassium t-butoxide. This reaction requires activation energies which depend on the type of activation method used. Chemical ionization (CI) requires less activation energy than liquid chromatography/mass spectrometry (LC/MS).
