Description:

Dimethyltin oxide is a polyene that inhibits the enzyme acyl CoA synthetase. It is used as an antioxidant to prevent oxidation of fats and oils, such as from cooking oils, in food processing. Dimethyltin oxide also has chelate ring properties that allow it to react with metal ions, such as iron and copper, which can cause oxidative damage to cells. The reaction solution for this product contains polycarboxylic acid ester linkages, which are hydrolyzed by esterases. This product has been shown to have antioxidative properties in the form of free radical scavenging activity and inhibition of lipid peroxidation.
