1,3-Olein-2-stearin is a white to slightly yellowish, crystalline solid. It has a melting point of around 170°C and a molecular weight of 342.5 g/mol. 1,3-Olein-2-stearin is soluble in organic solvents such as chloroform, acetone and ether. It can be used as an oil or fat substitute in food products. 1,3-Olein-2-stearin can be used as a calibration standard for FTIR spectroscopy due to its repeatable molecular structure. This molecule is also used in muscle metabolism studies because it has been shown to increase the uptake of triglycerides by adipose tissue cells in mice.
