18-Hydroxyoctadecanoic acid is a hydroxylated fatty acid found in the suberin layer of plant cuticles. It is an inhibitor of hydroxide-mediated alkali hydrolysis, which is the most important reaction in the particle and phosphite production process. 18-Hydroxyoctadecanoic acid binds to the hydroxyl group of 18-hydroxyoctadecanoic acid with a 1:1 stoichiometry, forming an adduct that has low reactivity. 18-Hydroxyoctadecanoic acid has been shown to inhibit aldehyde dehydrogenase activity in rat liver microsomes.
