6-Oxodecanoic acid is a levorotatory, non-chiral molecule that has been shown to inhibit the growth of bacteria. It can be produced by hydrolysis of the natural compound methyl 6-oxodecanoate. The optical rotation is -58° (c=0.5, DMSO). It also has been shown to be an effective inhibitor of Saccharomyces cerevisiae and Cladosporium sphaerospermum. This acid can be synthesized in two steps from commercially available starting materials using microorganisms such as Escherichia coli or Saccharomyces cerevisiae. Microorganisms are screened for their ability to produce 6-oxodecanoic acid and then used in fermentation tanks to produce large quantities of the product.
