5-Hydroxypentanal is a reactive aldehyde that is produced by the dehydration of pentanal. It has been shown to have carcinogenic activity in animal models, and has been used to induce lymphocytic leukemia in rats. 5-Hydroxypentanal is also found in many foods and beverages. The most common sources of exposure are from fried foods, such as french fries, potato chips and other fried snacks. Exposure can also occur from drinking alcoholic beverages and from breathing secondhand smoke. 5-Hydroxypentanal reacts with proteins, causing crosslinking reactions that lead to the formation of stable complexes between proteins. This reaction is irreversible and leads to changes in protein structure and function that may result in cancer or other diseases. 5-Hydroxypentanal can be synthesized by dehydration of pentanal or by thermal isomerization of 2-methylbutyraldehyde (2MBAL).
