H-Arg-Ala-OH acetate salt (HAA) is a histidine analogue that has been found to have physiological function as an endogenous substrate for serine protease. HAA acts as a competitive inhibitor of the serine protease enzyme by binding to the active site serine in the active site. The molecule is a disulfide bond and can be synthesized by the microorganism Corynebacterium glutamicum. This salt was extracted from yellowtail and found to inhibit corynebacterium glutamicum. X-ray absorption studies showed that the molecule contains a single amino acid, which is an analog of histidine.
