(Allylthio)acetic acid is a volatile organic compound. It is also known as allyl mercaptan, and is one of the most important sulfur-containing compounds in garlic. It has been shown to interact with other volatile compounds such as alliin and allyl alcohol, which are responsible for the characteristic odor of garlic. The condition of the garlic bulb or clove may also affect the amount of (allylthio)acetic acid present. For example, when garlic cloves are harvested before full maturity, they contain more (allylthio)acetic acid than if they are harvested after full maturity.
