Acetoxyacetic acid is the reaction product of ethyl formate and hydrogen peroxide. It can be used as a model system to study the reactions of polymers in film form. Acetoxyacetic acid has been shown to react with hydroxyl, hydroxy, and β-amino groups to form products containing a 5-hydroxymethylfurfural (5-hmf) group. Hydrogenated acetoxyacetic acid can also be produced by reacting acetoxyacetic acid with isovaleric acid. The irreversible inhibition of an enzyme by acetoxyacetic acid is due to its ability to react with the inorganic component of enzymes such as phosphates or sulfides. Acetoxyacetic acid reacts with these components by forming a new carboxylic acid that is non-enzymatic.
