Azoalbumin is a soybean trypsin inhibitor that has been shown to be effective in the inhibition of protease activity in both human serum and sephadex g-100. It has been shown to inhibit the growth of bacterial strains such as Escherichia coli, and Pseudomonas aeruginosa, while not affecting the growth of other bacteria such as Staphylococcus aureus. Azoalbumin also has the ability to induce collagen synthesis. The optimal pH for this protein is between 4.5 and 7.5, with a ph optimum of 5.
