2-Acetyl-3-methylpyrazine is a tert butyl compound that has been shown to have a catalytic effect on the oxidation of hexanal and maltol. It also has an ability to form hydrogen bonds with hydrophilic compounds, which may be due to its hydrophilic nature. 2-Acetyl-3-methylpyrazine is often used as an analytical reagent for examining active site residues in proteins and for testing samples for the presence of aldehydes. The physicochemical properties of 2-acetyl-3-methylpyrazine are similar to those of other tert butyl compounds, with a melting point of about 88 °C, boiling point of about 220 °C, and density of 1.0 g/cm³.
