Z-L-alanyl-L-glutamine is an inactivating agent that stabilizes enzymes. It is a synthetic amino acid that has the same structure as L-alanyl-L-glutamine and can be used to replace the latter in enzyme preparations. Z-L-alanyl-L-glutamine is stable at constant temperatures and can be immobilized by covalent bonding or adsorption. It has been shown to have high affinity for chymopapain, which is a proteolytic enzyme that hydrolyzes peptide linkages of proteins. This affinity leads to an efficient method for the stabilization of chymopapain, allowing it to be used for magnetic separation and other applications.
