D-Ala-Gly-OH is a surfactant that is produced by the Gram-negative bacterium, E. coli, and can be extracted from the periplasmic space of cells with ethanol. It is also produced by the Gram-positive bacterium, Bacillus subtilis. D-Ala-Gly-OH has been shown to have stabilizing effects on cell membranes and can be used as an emulsifier in food products. The antibiotic activity of D-Ala-Gly-OH has been demonstrated through its ability to inhibit protein synthesis in Escherichia coli and other gram negative bacteria. This compound can also block the incorporation of d-alanine into proteins, which may lead to a decrease in eluting activity of amide bonds.
