O-Acetyl-L-serine is a natural compound that is the acetylated form of L-serine. It has been found to be an inhibitor of plant enzymes, primarily in the metabolic pathways of amino acid and nucleic acid biosynthesis. O-Acetyl-L-serine is synthesized by plants as a result of carbon fixation. This compound also has a role in the uptake and transport of nutrients into the plant cell.
O-Acetyl-L-serine has been shown to inhibit enzymes that are involved in the metabolism of glycogen, starch, and sucrose. It can also inhibit enzyme activities associated with fatty acid synthesis, such as lipase activity, phospholipase activity, and aminotransferase activity.
The optimum pH for this compound's reaction mechanism is 5.5 to 6.5 with an optimal uptake at pH 7 to 8. Hydrochloric acid is required for this reaction mechanism to occur
