2-Amino-dipyrido[1,2-a:3’2’-d]imidazole (ADI) is a heterocyclic amine that is found in meats and fish. It has been shown to cause cancer in rats when it is administered with carbon tetrachloride. ADI has been identified as the carcinogenic agent in this study, which is thought to be due to its ability to form reactive metabolites when it interacts with glutamic acid or l-glutamic acid. The metabolism of ADI also depends on the presence of hydroxamic acids, which are inhibitors of cytochrome P450. The liquid chromatography method was used for the detection of ADI and other heterocyclic amines in food samples. This method can be used to measure their concentrations and selectivities at different levels of exposure.
