3-Benzyloxy-2-methyl-pyran-4-one is a water soluble molecule that has been developed as an antimicrobial agent for use in the food industry. The molecule is highly active against gram-negative bacteria such as Escherichia coli and Salmonella enterica. 3-Benzyloxy-2-methyl-pyran-4-one also inhibits maltol, which is an enzyme inhibitor that prevents the production of ferredoxin, an important electron carrier in the respiratory chain. This inhibition causes the metabolic rate to decrease and results in cell death.
