Sorbic acid is a natural organic compound that is found in many plants, such as apples and apricots. It is also used as an anti-fungal agent in food preservation. Sorbic acid has the chemical formula CH2=CHCOOH. The two geometric isomers of sorbic acid are cis-sorbic acid (or meso-sorbic acid) and trans-sorbic acid. Trans-sorbic acid has a melting point of 98°C, while cis-sorbic acid melts at 112°C.
