Cyanidin-3-galactoside chloride (C3G) is a natural product that has antioxidative properties. It has been shown to have transcriptional regulatory effects on oral pathogens, such as Streptococcus mutans and Porphyromonas gingivalis. C3G also inhibits the growth of these bacteria by blocking the activity of an enzyme that is required for their colonization. C3G is soluble in water and can be synthesized from protocatechuic acid, which is found in plants. The compound binds to the surface of cells and inhibits protein synthesis by blocking enzymes involved in the phase transition temperature of proteins. The molecule also prevents water vapor from entering cells, which results in dehydration and death of the cell. Cyanidin-3-galactoside chloride can be synthesized through a number of different routes, including preparation from trifluoroacetic acid or hydroxyl group under phase transition conditions at elevated temperatures using water
