Calcium iodate is a salt that contains two ions of calcium and one ion of iodine. It is used as a food additive to prevent the formation of black spots on bread, and to inhibit the activity of yeasts in bread dough. Calcium iodate has been shown to increase the amount of copper in the body by binding to it, which can lead to an increase in aminotransferase activity. The structure of calcium iodate can be determined using FT-IR spectroscopy or titration calorimetry. This compound is also used as a pharmaceutical agent for treating hyperthyroidism, hypoparathyroidism, and goiter.
