a-Carotene is a carotenoid that is found in many plants and fruits, such as carrots. It is used as a dietary supplement or food coloring agent. a-Carotene has been associated with a reduced risk of renal cell cancer in humans. The antioxidant properties of this compound are due to its ability to inhibit lipid peroxidation, scavenge reactive oxygen species, and protect against oxidative stress. This activity can be measured by inhibiting the enzyme activities of the carotenes in the presence of an oxidant (in vitro). Laboratory studies have shown that a-carotene prevents the development of renal cell cancer when added to human serum (in vitro). Multivariate logistic regression analysis has shown that matrix effects may be responsible for this protective effect. In vitro assays have shown that it is possible to measure antioxidant vitamin levels in human serum using an analytical method called spectrophotometric assay.
