Coumalic acid monohydrate is a white crystalline compound that is the magnesium salt of p-hydroxybenzoic acid. It is used as a food additive and has antioxidant properties. Coumalic acid monohydrate is extracted from plants such as elderberry, plum, cherry, and apple. The optimum extraction process involves heating the plant material to 100°C in the presence of an organic solvent such as ethanol or acetone. Coumalic acid monohydrate contains two hydroxyl groups which can be oxidized to form two molecules of benzoic acid by reaction with oxygen. This oxidation leads to the formation of protocatechuic acid, which can then react with other compounds to produce new compounds such as phenol, catechol and phloroglucinol. The reaction mechanism for this transformation begins with an attack on an electron pair from the hydroxyl group at C-2 by phosphorus pentoxide (P2O5) followed by protonation at C
