N-Carbobenzoxy-L-phenylalaninol is a peptide synthesis inhibitor that binds to the aldehyde group of the hydroxyl group of the peptide. It is a noncompetitive inhibitor of peptidases, and has been shown to inhibit pancreatic enzymes in vitro. The nature of this inhibition is stereospecific and occurs with alcohols as well as diazoacetates. This drug also inhibits the interaction between nerve cells and their environment, which may be mediated by its ability to inhibit acetylcholine release from nerve cells. N-Carbobenzoxy-L-phenylalaninol has been shown to have an inhibitory effect on structural formula hydroxides, which may be due to its ability to form hydrogen bonds with metal ions or water molecules.
