N-Dodecanoyl-valine mono sodiumsalt is a dodecylated amino acid used in animal feed as a nutritional supplement. It is also used as an information enhancer for the validation of protein sequences. N-Dodecanoyl-valine mono sodiumsalt is used as a solute to model the structures of matrix metalloproteinase (MMP) inhibitors, which are proteins that inhibit the activity of MMPs, enzymes that break down collagen and other extracellular matrix components. N-Dodecanoyl-valine mono sodiumsalt has been shown to be an inhibitor of MMPs, preventing breakdown of collagen and other extracellular matrix components. It has also been shown to have anti-inflammatory properties.
