4,5-Dimethyl-2-isobutyl-3-thiazoline is a thiazoline compound that is found in the human body. It is a byproduct of the oxidation of propylene glycol, which is a component of food preservatives. 4,5-Dimethyl-2-isobutyl-3-thiazoline has been shown to be toxic to rat liver cells and can cause liver damage. This compound has also been found to be an allergen in some people with asthma. The presence of 4,5-dimethyl-2-isobutyl-3-thiazoline in damaged foods may be due to its formation from the breakdown of sulfur compounds such as sulfide and dimethyl trisulfide. This compound can also form from the degradation of unsaturated fatty acids such as hexanal and disulfide or from carbohydrates like maltol and d-xylose.
