3'-Dehydrolutein is a naturally occurring carotenoid found in the leaves of the sea beet. It is a dietary supplement that can be used to prevent and treat lipid oxidation, as it has been shown to have antioxidant properties. 3'-Dehydrolutein has been shown to have uptake in fatty tissues following oral administration. This compound has also been shown to have an effect on carotenoid-related enzymes, such as xanthophylls, which are important for photosynthesis in plants. 3'-Dehydrolutein inhibits the oxidation of fatty acids and prevents the formation of oxidation products by acting as an electron scavenger or free radical quencher.
