2,2'-Dihydroxydiphenyl Ether is a compound that inhibits copper-dependent enzymes such as malonic acid decarboxylase. It binds to the copper and forms a ternary complex, which prevents the enzyme from performing its function. The inhibition of this enzyme leads to decreased levels of malonic acid and other fatty acids. 2,2'-Dihydroxydiphenyl Ether also has an effect on the thermal expansion of water due to its unsaturated alkyl group. This property can be used to measure the concentration of 2,2'-dihydroxydiphenyl ether in a solution by measuring the increase in thermal expansion with increasing concentrations of this inhibitor.
