Ethyl 2-acetyloctanoate is a cytosolic enzyme that catalyzes the transfer of acetyl groups from acetyl-CoA to aldehydes, forming diketones. It also has specificities for methyl 2-acetyloctanoate and ethyl 3-methylhexanoate, but not for methyl octanoate. The enzyme is inhibited by hydrochloric acid and aldehydes. Ethyl 2-acetyloctanoate is used as a sensor for alkylation reactions that may produce carbonyl compounds. It can be used in the food industry to prevent spoilage caused by lipid oxidation and rancidity. Calreticulin binds to the active site of ethyl 2-acetyloctanoate, modulating its activity and inhibiting it irreversibly when it binds to the active site.
