2-Ethenyl-3-ethyl-5-methylpyrazine, also known as ETEM, is a food additive with a herbaceous and nutty aroma. It is used in the production of breads, cakes, and other baked goods. It has been reported to be effective in inhibiting the growth of bacteria such as Salmonella enterica and Listeria monocytogenes. ETEM may also have antimicrobial properties against Escherichia coli O157:H7 and Bacillus cereus. 2-Ethenyl-3-ethyl-5-methylpyrazine can be synthesized by reacting acetaldehyde with hydroquinone in the presence of ethyl group.
