Erythro-guaiacylglycerol (EGCG) is a phenylpropanoid that can be found in green tea. It has been shown to have potent inhibitory activity against peroxide and hydrogen peroxide, which are compounds that cause oxidative stress in the body. EGCG also has a catalytic effect on the oxidation of phenylpropanoids, such as coniferyl alcohol. The activation energies for this process are between 35 and 45 kcal/mol. EGCG also has an enantiomeric ratio of R:S = 3:2, with an optimum temperature range of 25 to 30°C and substrate concentration range of 0.1 to 1 mM.
