Furaneol acetate is a natural substance that belongs to the class of compounds known as binder. It has been shown to have toxic effects on some organisms, but not others. Furaneol acetate binds to silicon anions and can be used as a preservative in food products, such as cheese and wine. Furaneol acetate also has the ability to bind other substances, such as dyestuffs, which are added to foods for coloration. Furaneol acetate may also bind with dl-pyroglutamic acid and other functional groups. Furaneol acetate is found in some species of subtilis, including Bacillus subtilus and Bacillus licheniformis.
