Z-Gly-Gly-OH is a soybean trypsin inhibitor that has been synthesized from wheat germ, and is used as an enzyme inhibitor. It has hydrolytic activity against soybean trypsin. The reaction time for the hydrolysis of Z-Gly-Gly-OH is about 10 minutes in an organic solvent at pH 7.5 and 25°C, with a ph optimum of about 8.5 to 9.5. The product is more stable than the substrate at high temperatures and low pH values, but less stable at high pH values, so it can be used as an enzyme inhibitor in a variety of conditions. Z-Gly- Gly-OH can also be immobilized on Sephadex G100 or sephadex G50 using ionic or covalent binding methods, which increases its stability and decreases the amount of byproducts produced during hydrolysis of the substrate.
