Description:

Z-Gly-Phe-OH is a carboxy terminal amino acid that has been shown to inhibit the binding of sodium carbonate to pancreatic enzymes. This inhibition is reversible and may be due to the formation of a complex between Z-Gly-Phe-OH and the carboxy terminal of the enzyme. The binding constants for this interaction are in the range of 10M. The pH optimum for this interaction is between 7 and 8, with an activation energy of 0.2 kcal/mol. Z-Gly-Phe-OH inhibits pancreatic enzyme activity by competitive inhibition with aliphatic hydrocarbons, aromatic hydrocarbons, and kinetic mechanisms. Sephadex G-100 was used as chromatographic separation material for this study.
