Gly-Tyr-Gly-OH is a carboxylic acid with the chemical formula CH3COOH. It has three hydroxyl groups, which are found on the glycerol backbone. Gly-Tyr-Gly-OH is a decarboxylated form of glycerol, which is found in plants and plant cells. The molecule has three acidic protons that can be observed from its nmr spectra, as well as two peroxide molecules that can be seen from its acidity. The functional theory explains the way in which this molecule behaves by considering the kinetic and odorant binding properties. In order to study the binding of these molecules, assays have been used to measure their interactions with odorants such as benzaldehyde and butanal.
