(S)-Alpha-Acetolactic acid potassium (AAK) is a metabolite produced by the bacterial fermentation of glucose and is used in the production of L-lysine. The biosynthesis of this compound starts with the conversion of pyruvate to acetolactate by the enzyme pyruvate decarboxylase, followed by conversion to acetolactic acid by acetolactate synthase. The product is then converted to alpha-acetolactate by alpha-ketoglutarate decarboxylase, which is subsequently converted to alpha-acetohydroxy acid by dehydrogenases and finally converted into L-lysine. This compound has been shown as a marker for neuropathic pain and chronic pain in tissues. It also has been shown to be an important part of a strategy for identifying new enzymes involved in metabolic pathways.
