2,3,4-trihydroxytetrahydrofuran-2-one (THF) is a glycosidase inhibitor that inhibits the action of enzymes called glycosidases. It can be used as an additive in food to inhibit browning and preserve freshness. THF works by binding to the active site of the glycosidase enzyme, thereby preventing the enzyme from breaking down sugar molecules and producing colorless compounds. The preservative is also known to inhibit polylactic acid and polyglycerol fatty acid esters. 2,3,4-Trihydroxytetrahydrofuran-2-one has been shown to be effective against fruit extracts that contain phenolic compounds with hydroxyl groups. This chemical can also act as a solid catalyst for dehydration reactions.
