His-Gly-OH is a molecule that contains nitrogen atoms and hydrogen atoms. The nitrogen atoms are found on the amide group, which is composed of an intramolecular hydrogen bond with a proton. His-Gly-OH has been shown to inhibit vasoactive intestinal peptide (VIP) and soybean lipoxygenase. His-Gly-OH binds to the copper complex of VIP, while it also inhibits soybean lipoxygenase by binding to the copper complex. The graphical methods used in this study were based on detectable concentrations of His-Gly-OH.
