Isohumulone is a polymeric form of humulone, a type of flavonoid. It is found in hops (Humulus lupulus) and has been shown to have antioxidant properties. Isohumulones are formed from the oxidation of alpha-acids in hops during the brewing process. Isohumulones can be used as an alternative to alpha-acids for bitterness in beer production because they do not contribute to the formation of foam. In addition, they have been shown to inhibit the growth of resistant mutants that are difficult to control by chemical means. The mechanism of action is due to a decrease in mitochondrial membrane potential and increased reactive oxygen species production.
