Nitroprusside is a nitric oxide donor that has been used in the treatment of congestive heart failure and to lower intracranial pressure. It is also used as an additive in food to preserve the color of meat. Nitroprusside is converted to nitrite, which reacts with myoglobin to form metmyoglobin, which causes the meat to turn brown. Nitroprusside also binds to dietary iron, preventing its absorption by the body. The drug has been shown to inhibit tumor growth in mice via inhibition of protein synthesis and induction of apoptosis. This drug also inhibits angiogenesis in vitro and inhibits cell proliferation in cultured human cancer cells. Nitroprusside can be detected using analytical methods such as gas chromatography-mass spectrometry or high performance liquid chromatography coupled with tandem mass spectrometry (HPLC-MS/MS).
