This substance may be found as a reaction product in the reaction system with phosphatidylcholine and lecithin, which produces volatile compounds, such as aldehydes and mercaptans. 2-Methyl-3-pentanethiol can also be found in trace amounts as an impurity in some volatile flavorings.
