Metsulfuron is a sulfonylurea herbicide that acts as an inhibitor of the enzyme acetolactate synthase (ALS), which is involved in the biosynthesis of branched-chain amino acids. This inhibition prevents the formation of the three amino acids, valine, leucine and isoleucine. Metsulfuron has been shown to have long-term efficacy and a low degree of toxicity to animals, plants, and humans. It has been found to be chemically stable under conditions that are known to cause degradation in other herbicides, such as fatty acid esters. The biological activity of metsulfuron increases with increasing temperature and decreasing pH, although it is less active at high temperatures than other sulfonylureas. Metsulfuron also binds strongly to soil particles and plant roots and is therefore not readily available for uptake by plants. It has been shown that metsulfuron inhibits protein synthesis in plants by modifying the structure of proteins in plant cells
