Maltol isobutyrate is a compound that belongs to the class of alicyclic hydrocarbons. It has structural formula C5H8O2, molecular weight of 116.13 and melting point of -6.7°C. Maltol isobutyrate is a white crystalline substance with an odorless taste. Maltol isobutyrate can be found in honeybush and has been shown to lower blood pressure in rats with high blood pressure. This effect may be due to maltol's ability to inhibit the conversion of propionate into succinate, which prevents the accumulation of hydrogen ions in the body and stimulates the production of bicarbonates. Maltol isobutyrate also inhibits lipid peroxidation and reduces levels of cholesterol in mice with high cholesterol levels by inhibiting the activity of 3-hydroxy-3-methylglutaryl-CoA reductase (HMG-CoA).
