3-(3-methylthien-2-yl)propanoic acid (3MTPA) is a thiamine derivative that is used as a food additive. 3MTPA has been shown to enhance the flavour of milk products and to increase the shelf life of lactococci. It has also been shown to inhibit growth in model bacterial systems, such as Escherichia coli and Lactobacillus plantarum, at concentrations as low as 0.5 mM. 3MTPA inhibits cellular respiration by binding to pyrophosphate, which is necessary for ATP synthesis. This inhibition leads to a decrease in the production of lactose and other organic acids, which causes an off-flavour in milk products. 3MTPA also binds to pyridoxal, which is required for protein synthesis and lactose production by Lactobacillus plantarum. This binding leads to a decrease in cell viability and an increase in the production of lactic acid
