Description:

Trans-3-Nonen-2-one is a metabolic intermediate that belongs to the group of β-unsaturated ketones. It is produced by the oxidation of unsaturated fatty acids and can be synthesized from chalcones. Trans-3-Nonen-2-one has been shown to react with isovaleric acid in a reaction catalyzed by hydrogen peroxide to produce methyl cinnamate. This reaction is reversible and exothermic, occurring at lower temperatures than other reactions of this type. The kinetic study showed that the rate of formation of methyl cinnamate was dependent on the concentration of trans-3-nonen-2-one, but independent of the concentration of isovaleric acid. Reaction time also had an effect on the rate of formation, but not on the final concentration or composition.
