2-NP-AOZ is a metabolite of erythromycin. It is extracted from animal tissues using an acetate extraction and detected with LC-MS/MS. 2-NP-AOZ has been shown to be a potent inhibitor of protein synthesis in muscle tissue, as well as other tissues. This compound has also been shown to have antimicrobial activity against sulfadimethoxine and monoclonal antibody production in mice. The detection limit for this compound is low (0.1 mg/kg), which makes it suitable for use in the study of health functional foods and for the detection of mycotoxins in food products such as meat and eggs.
