Z-Orn(Boc)-OH is a synthetic molecule that can be used as a sweetener. It has been shown to have a trifunctional effect on human taste and bitterness, which may be due to its ability to bind to the sweet taste receptor on the tongue. This molecule is cyclic and macrocyclic with three ester groups, two carboxylates, and one hydroxyl group. Z-Orn(Boc)-OH has been shown in simulations to have a high binding affinity for the aminobutyric acid transporter (ABAT) and an inhibitory effect on ornithine decarboxylase (ODC). The binding of Z-Orn(Boc)-OH to ABAT is thought to be responsible for its sweetening effects.
