Piperazine-N,N-bis(2-ethanesulfonic acid) is a chemical reagent that is used to inhibit enzymes in the food industry. It can be used as an enzyme inhibitor in the preparation of samples for analysis and process optimization. Piperazine-N,N-bis(2-ethanesulfonic acid) will bind to the surface membrane of cells and inhibit the activity of enzymes that are located on this membrane. This agent has been shown to inhibit soybean trypsin and human immunoglobulin activities. It also inhibits microbial metabolism by binding to nucleotides and blocking their access to the ribosome. The hydrophobic effect of piperazine-N,N-bis(2-ethanesulfonic acid) may also contribute to its inhibition of microbial metabolism.
